Ingredients
2 cups baby spinach
1 cup large white beans ( or any other cooked beans you already have in your fridge)
1 handful of cherry tomatoes (about 6)
3–4 leaves of chopped basil
1/2 lime juice
1/4 tsp cumin powder
1/4 tsp ginger powder
1/4 cup pine nuts (lately I prefer mine raw but you can roast them for a nuttier taste and crunchier texture)

Instructions
1. In a pan, heat your olive oil on medium heat. Add your spinach, sauté till they are wilted and season with the cumin, ginger powder and the s+p.
2. Add the tomatoes, lime juice and beans. Sauté for few more minutes and add the nuts and the chopped basil. Give it a quick toss and serve.
