Ingredients
2 cups cooked quinoa- room temp or cold
1/2 red bell pepper diced
1 celery stalk diced
1/4 cup chopped fennel
5–6 cherry tomatoes- cut in half
2 tbsp chopped parsley
2 tbsp olive oil
1 1/2 tbsp apple cider vinegar
1 lime- juice

Instructions
Add all ingredients in a bowl and mix well.
Traditional Taboulé salad’s (also known as Tabouli or Tabbouleh) main ingredients are:
Wheat bulgur, parsley, mint, onions, tomatoes and cucumbers. But since I can’t tolerate gluten or onions, this is my GF version with some substitutions.
