Ingredients
PORRIDGE BASE
2 cups rolled oats
1/2 cup almond milk
1/2 cup water
1 tsp flax seeds
STRAWBERRY + OATS
fresh strawberries
handful of raw almonds
1 tbsp almond butter
1 tbsp shaved dark chocolate
BLUEBERRIES + OATS
1 cup fresh blueberries
1/2 lime- juice
1 tsp coconut sugar or stevia- optional
APPLES + OATS
1 apple- cut in quarters
1/2 lime- juice
1 tsp coconut sugar or stevia- optional
1 small cinnamon stick
Instructions
PORRIDGE
Mix the water, almond milk, oats and flax seed in a medium-sized pot. Slowly bring to a boil making sure you are constantly stirring with a spoon to avoid the oats from sticking at the bottom of the pan. Cook for about 5 minutes or until the porridge gets to the consistency you like.
Serve with the cut strawberries, almonds, chocolate shavings and almond butter.
BLUEBERRIES COMPOTE
I like to do this simple blueberry compote when I have left over berries that are getting too ripe and I don’t want them to go to waste!
In a small pot, cook the blueberries with the lime juice + sugar. Stir well as it can quickly caramelize.
BAKED APPLE
Cook the apple with the lime juice + sugar + cinnamon stick until it is tender and starts to caramelize.
I like to serve my porridge with the compote still warm, right off the stove! But you can also make it a day -or two- before and just reheat it when you are ready to add it to your porridge.
