Ingredients
1 cup cooked french lentils
1 cup shredded Kale
1/2 cup shredded Brussel Sprouts
5–6 cherry tomatoes -cut in half
1/2 avocado -cubed
2 tbsp chopped parsley
2 tbsp chopped cilantro
1/4 of a fennel thinly sliced- optional
1 cup cooked basmati rice
4 tbsp olive oil
2 tbsp apple cider vinegar
1/2 lime- juice
1/4 tsp turmeric powder

Instructions
French lentils are great for cold salads because when you cook them, they don’t lose their shape and add more texture and an earthy flavor to your dish.
This salad is super easy- just mix all ingredients gently until everything is combined- and it holds well for one or two days in the fridge. So if you’re planning of preparing it ahead of time, don’t add the avocado.
You can also skip the rice if you know you’ll be serving it as a side dish or as an appetizer before a hearty meal.
