Ingredients
3 chicken breasts
1 large sweet potato
1 potato
1 cup frozen green peas
1/4 cup chickpeas (optional)
6 carrots
2 cups steamed brown rice
2 sprigs of thyme (optional)
1 cup kale
pinch of salt
Instructions
1. In a large pot add all ingredients -except for the rice, peas and kale- and cook over medium heat.
2. Cook the rice separately and at the same time, thaw your peas and chop your kale.
3. When the chicken is almost done, add the rice, peas and kale. You want to do this so that the kale doesn’t get overcooked and retains all its nutrients.
4. Place in a blender or food processor. I prefer to use a food processor and keep the mix a bit chunky, not completely pureed.
5. Transfer to glass storage containers and freeze what you don’t need. I like to use 16 oz Ball Mason jars.
Meat is more unstable frozen so I usually prepare this meal when I know I am going to be using it immediately. It will keep safe up to three months but I try to use within the month. But again, I have two small dogs and a large one so this meal goes really fast. I mix it with their dry food and they love it!
