Description
This granola recipe is so easy! I don’t add any sugar to it as I find that it is already very rich as it is. If I need some sweetness, I will just top it off with some fresh fruit when serving or even some honey. Also, I like to use already toasted Buckwheat (Kasha). I find it gives my granola that extra crunch. But you can also use the uncooked version and cook your granola for a bit longer.
Ingredients
2 cups GF oats
2 cups toasted buckwheat (Kasha)
1 cup chopped raw almonds
1/2 cup coconut flakes (optional- you can also toast them separately + add as a garnish)
2 tbsp flax seeds
1/2 tsp salt
1 tsp cinnamon
1/4 cup avocado oil (or coconut oil)
1/4 cup almond butter (you can substitute by any other unsalted nut butter you like)
Instructions
Preheat oven to 350F
1. Mix all ingredients and spread on a sheet pan.
2. Bake for 30′ and make sure you rotate your pan every 10′ to make sure it browns evenly.
Note: Allow your granola to cool completely before storing or it will loose its crunch because of the heat trapped in the container.
I store my granola in glass containers, and if I do a large batch, I store whatever I know we are not going to use in the freezer in an airtight container. It will keep for a couple of months.
