Description
I like to do this easy recipe when I realize we’ve bought too many blueberries and they are going to turn bad sooner than we can manage to eat them all! So, to avoid spoilage and having to throw them away, I turn them into a delicious vegan ice cream!
Ingredients
2 cups fresh blueberries
1/2 lime juice
1 tsp coconut sugar
1 can organic coconut cream (not milk, you need the fat content!)
Instructions
In a medium pot, add all your ingredients except for the coconut cream. Make sure to stir everything well as the sugar will caramelize quickly and you can burn your blueberries pretty easily. If you feel that 1/2 lime is not enough, add a little bit more. The goal is to cook your berries into a quick marmalade.
Cook them for about 10 min max and let them cool until they are warm and not piping hot! Pour them into your blender, add the coconut cream and mix very well. Pour into a container and freeze.
