Description
I’m sure you’ve heard how easy it is to do your own almond milk. The truth is that YES it is super easy and you don’t need a special gadget to do it expect a good blender, a cheese cloth or a fine mesh stainer. You can also use an old piece of cloth, it just has to be thin enough to allow the liquids to pass through it.
Make sure you invest in good quality almonds and to plan ahead. Don’t make a big batch if it’s just for yourself or a family of two. Homemade almond milk will spoil faster than some of the store bought ones generally because you are only using 2 main ingredients: water and almonds!
Ingredients
1 cup raw almonds
2 1/2 cups water (to soak-cold)
4 cups cold water to blend
pinch of salt
1–2 dates (optional)
Instructions
Soak your almonds preferably overnight. But if you forget, go for at least 8-12 hours.
If I have the time, I will remove the skin before I blend them. I also feel that by doing that, the milk turns out creamier and is easier to digest. But if you don’t want to bother with it, it’s just fine.
Before you start blending your almonds, add the salt and if you want to sweeten your milk, add the dates. I tend to do my milk unsweetened. It gives me more versatility as I can then use it either for a drink or for cooking some savory dish.
Strain your mixture with a cheese cloth or a fine mesh strainer. Use a spatula to push the liquid out through it and don’t throw away the pulp! You can use it later to create some dessert! Remember that it will only last few days if you’re not using it right away.
